I made a savory pie, mother fuckers.

Blended cashews, tofu, soy creamer, spices, nutritional yeast all up.
Mixed in sauteed mushrooms, spinach, onions, tomatoes and zuchinni, as well as some daiya.
Poured it into a whole wheat pie crust, sprinkled some daiya on top.
Baked at 375 for 30-45 mins and broiled it for the last 5 just to give it a crispy top.

It was so god damn tasty.

Dinner!

Salad with red onion, peppers, avocado, almonds and a balsamic/olive oil dressing. 

Stuffed cannelloni with tofu ricotta, daiya, sauteed mushrooms, onions, peppers, baked in tomato sauce and more daiya. 

All topped with a nice glass of peller estates sauvignon blanc.

Stuffed purple & yellow bell peppers.
Stuffed with Quinoa, lentils, green onions, garlic, red onion and cherry tomatoes in a creamy sauce, topped with daiya.

Baked in the over for about 15-20 minutes. 

and smores for desert!

I made gluten free mac n’ “cheese” last night!!!

 with a spinach salad w/ strawberries, blueberries, red onion, walnuts and a reduced balsamic dressing. 

Organic brown rice pasta. With a cheese sauce that was made by combining tofutti plain cream cheese, almond milk and daiya in a pot, pouring it in the dish with the pasta, topping it with more daiya and putting it in the oven on broil for 5-10 mins, to get a crispy cheesy top layer. (Make sure to check on it every couple minutes so it doesn’t burn)
